There’s sediment on the bottom – add it in or pour slowly for a clearer pale copper hue. This is fizz that’s laced with savoury flavour and fine acidity: tannins adding more depth – exciting stuff.”
Most historians would agree that a dry version of Nebbiolo has been around since the mid 1800’s. Before this, Nebbiolo based wines made in and around the hills of Piedmonte appear to have been sweet and sometimes even sparkling wines, but even these precursors to today’s Nebbiolos apparently had admirers, among them the English elite and Thomas Jefferson…Who in 1787 declared the style ‘As lively as any sparkling wine I’ve tasted’
Nota Del Vino
Unfiltered and cloudy with notes of rum soaked Christmas cake and freshly cut blood orange. The palate has salty/sweet characters, alongside pink grapefruit peel and lemon verbena. The wine has delicate acidity with a textural mouthfeel and grip, the bubble is subtle giving a slight lift to the palate.
